Don Thompson’ Famous Caldillo
2 pounds of round steak-cubed, 2 Tbsp of salad oil, 1 clove of garlic-mashed, 1 onion diced, one pound can of tomatoes, 1 small can of chopped & diced green chilies, 1 cup of water, 1tsp. of salt, 2 tsp. of red chili powder, 1tsp. of oregano, dash of cayenne pepper,1/2 tsp cumin, two 15 oz. cans of pinto beans-drained. In Dutch oven brown cubed meat in hot oil…add all ingredients (except beans) cover, bring to a boil, reduce to a slow simmer for one hour (stirring occasionally). Add more water if necessary. Add the beans simmer for 30 minutes more. Makes 6 servings……Delicious!!!
Pie Crust Pin Wheels, “I learned to make these with my Granna”
Roll out left over pie crust. Brush with melted butter & sprinkle with cinnamon and sugar. Cut into l.5” by 5” long rectangles. Place on ungreased cookie sheet bake 375 degrees for 15 minutes. YUMMY!!!

Tita’s Jalapeno Pepper Cornbread
1tsp.salt
1/3 cup grated cheese
1 cup of cornmeal
1 cup cream style corn
2 tsp. baking powder
1 cup buttermilk
1/4 cup of cooking oil
3 or 4 chopped jalapeno peppers (canned)
2 eggs….Mix all together and bake 350 degrees for 1 hour
